“Chef-restaurateur”, a title especially for Saint-Martin
This is an important step forward in the field of Saint-Martin gastronomy. The title of chef-restaurateur created last December by the Territorial Council of Saint-Martin now comes to life thanks to the signing of a resources agreement, linking the Collectivité of Saint-Martin and the new association of Chefs-Restaurateurs of Saint-Martin. Alain Richardson, first vice-president in charge of economic attractiveness, and Alain Warth, president of the ACRSXM, wore a big smile at the time of signing this agreement, last Friday January 19, the objective of which is to highlight the destination Saint-Martin as the gastronomic “capital” of the Caribbean. This progress is fully within the framework of the destination contract, itself included in the Saint-Martin tourism code.
The title of master-restaurateur already exists at the national level, this initiative aimed to provide Saint-Martin with a unique title of chef-restaurateur, with regard to its culinary specificities and the constraints that are often different from those encountered elsewhere on French territory.
The association of chef-restaurateurs therefore has its work cut out for it while the role it has given itself will consist of leading the culinary sector, from production to plate.
For Alain Warth, “the title of chef-restaurateur is a first in France and a specific recognition for Saint-Martin”. He indicates that he wants to support chefs, by developing the excellence and quality of products but also by organizing events promoting local gastronomy, in line with the Gastronomy Festival. The training of young chefs is also a priority.
Bringing Saint Martin upmarket
The first vice-president Alain Richardson sees in this partnership a possibility of moving Saint-Martin upmarket and giving chefs the opportunity to make their know-how known beyond our borders. To support them, a reflection will be carried out by the Collectivité on the possibility of introducing tax adjustments for restaurateurs.
The convention will make it possible to encourage professionals in the region, the Collectivité will work on this alongside the ACRSXM association.
